Megan’s Mother’s Day Gluten Free Pancakes
I lost one of my best friends last week. She was a beam of light and energy and moved too fast for me to ever keep up. So she’s left this world and is onto the next, and I’m missing her something fierce. I’m also moving house so please forgive me if I reprint this recipe from a couple of years ago. Megan flew me out to Seattle for Mother’s Day a couple of years ago because neither of us had planned anything because it was Mother’s Day and there was a sale on Continental. So I had this magical weekend with gluten-free pancakes, her sweet and lovely family, and memories that will have to last me a lifetime. I’m so privileged to have been in her wheelhouse at all. So without further ado, here are the Mother’s Day pancakes her sweetheart Mark made for us.
